Meet Chef Fernando Vasquez
At the heart of Rôtie’s kitchen is Chef Fernando Vasquez, a Miami native with Cuban and Puerto Rican roots whose approach to food was heavily influenced by watching his mother cook. His philosophy centers on taking seemingly simple ingredients and finding ways to draw out extraordinary flavor.
His creativity extends beyond the plate. Chef Fernando believes an incredible dining experience begins with the culture inside the kitchen, prioritizing positivity, collaboration, and an environment where his team can do their best work.
At Rôtie, that philosophy comes to life through French-inspired cuisine with a modern, imaginative twist. Chef Fernando works collaboratively with Chef Ricky to develop dishes that balance flavor with beautiful presentation, paying close attention to color, texture, sauces, and natural elements such as edible flowers.

Local Ingredients, Elevated
Rôtie’s farm-to-table approach also puts an emphasis on sourcing locally whenever possible. Ingredients such as fresh herbs, specialty basil, marigolds, and squash blossoms make their way from local farms into dishes that feel both elevated and refreshingly unexpected.
